  • 1 teaspoon oil
  • 1/2 medium onion chopped
  • 5 cloves garlic chopped
  • 1/2 inch ginger finely chopped
  • 1 teaspoon Garam Masala
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne
  • 2 tomatoes juicy, pureed or 1 1/4 cup
  • 1 1/2 cups veggies or more, chopped small I used sliced carrots, small cauliflower florets and cubed butternut squash
  • 3/4 teaspoon salt or more
  • lemon optional
  • cilantro optional
