Ingredients

  • 1 tablespoon EVOO
  • 2 garlic cloves crushed
  • 1 teaspoon dried herbs mixed, I used thyme, oregano and basil
  • 1/2 cup shallots chopped
  • 1/2 teaspoon chilli flakes
  • 2 carrots cut into thick slices
  • 1/2 packet mushrooms cleaned and thickly sliced
  • 1/3 cup tomato puree
  • 1 tablespoon tomato paste
  • 1 teaspoon sugar
  • 1/3 cup barley soaked in warm water for 30 minutes or an hour
  • 1/4 cup lentils soaked in regular tap water for 30 minutes. I used yellow moong dal. You can use lentil of your choice
  • 1 cup vegetable stock or chicken stock, I used low sodium chicken stock
  • 2 cups water
  • salt to taste
  • ground black pepper freshly, to taste
  • cilantro leaves fresh, for garnish, optional
