Ingredients
- 1 tablespoon EVOO
- 2 garlic cloves crushed
- 1 teaspoon dried herbs mixed, I used thyme, oregano and basil
- 1/2 cup shallots chopped
- 1/2 teaspoon chilli flakes
- 2 carrots cut into thick slices
- 1/2 packet mushrooms cleaned and thickly sliced
- 1/3 cup tomato puree
- 1 tablespoon tomato paste
- 1 teaspoon sugar
- 1/3 cup barley soaked in warm water for 30 minutes or an hour
- 1/4 cup lentils soaked in regular tap water for 30 minutes. I used yellow moong dal. You can use lentil of your choice
- 1 cup vegetable stock or chicken stock, I used low sodium chicken stock
- 2 cups water
- salt to taste
- ground black pepper freshly, to taste
- cilantro leaves fresh, for garnish, optional
