Russian Layered Sour Cream Cake

Ingredients

• 3 tablespoons honey
• 2/3 cup sugar
• 1 teaspoon baking soda
• dough To make
• 2 cups spelt flour or all purpose Einkorn, where to find einkorn, spelt is available at Whole Foods
• 2 cups spelt flour or whole Einkorn, I grind my own wheat berries at home
• 1 teaspoon vanilla extract
• cream To make
• 2 pints sour cream pasture raised, I use raw
• 1 cup powdered sugar grind raw cane sugar in a coffee grinder
• crumbs Trimmed pieces of layers, ground into, using a food processor or blender
• 1/2 cup chopped nuts toasted finely, optional
• 1/2 grated chocolate optional
