Roast gammon for Christmas

Ingredients

• 1 gammon large, bone in or out – it’s your choice
• 2 carrots sliced
• 2 celery sticks chopped
• 1 small onion chopped
• 2 bay leaves
• 6 black peppercorns
• 3/4 cup packed brown sugar tightly
• 2 tablespoons cider vinegar
• 2 teaspoons wholegrain mustard
• 1 pinch ground cloves optional
• 4 tablespoons finely chopped onions
• 2 tablespoons brown sugar I used light Muscovado
• 25 milliliters whisky
• 3 tablespoons butter
• 3 tablespoons flour
• 1 cup stock chicken or vegetable
• salt
• pepper
