- 4 medium-sized potatoes, peeled and cubed - 1 onion, chopped - 2 cloves of garlic, minced - 1 tablespoon curry powder - 1 teaspoon cumin - 1 teaspoon turmeric - 1 teaspoon garam masala - 1/4 cup water - Salt and pepper, to taste - 2 tablespoons vegetable oil

Instructions

1. In a large bowl, mix together the flour, baking powder, and salt. Add in the vegetable oil and mix until the flour mixture resembles breadcrumbs. 2. Gradually add in the warm water and milk, a little at a time, and mix until a soft dough forms. Knead the dough for a few minutes until it becomes smooth and elastic. 3. Cover the dough and let it rest for 30 minutes. 4. In a separate pan, heat the vegetable oil over medium heat. Add in the chopped onions and garlic and sauté until they become translucent. 5. On a floured surface, roll out each ball into a thin circle. 9. Place a spoonful of the potato filling onto one half of the roti dough circle. Fold the other half over the filling and seal the edges by pressing them together. 10. Heat a non-stick pan over medium-high heat. Place the roti on the pan and cook for about 2 minutes on each side, or until golden brown. Repeat with the remaining dough and filling. 11.
