Instructions:

Step 1: Prepare the ingredients

Gather all the ingredients and prep them as listed above. Make sure the tofu is drained and cut into thin strips, and the vegetables are julienned.

Step 2: Soften the rice paper wrappers

Fill a large bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until it softens. Lay it flat on a damp towel.

Step 3: Assemble the spring rolls

Place a few strips of tofu in the center of the wrapper. Add a small amount of vermicelli noodles, followed by a few strips of carrot, cucumber, bell pepper, avocado, cilantro, and mint leaves. Be careful not to overstuff the spring rolls, as they may tear when rolled.

Step 4: Roll the spring rolls

Fold the sides of the wrapper towards the center, then roll it tightly from the bottom up. Repeat with the remaining wrappers and ingredients.

Step 5: Make the peanut dipping sauce
