For the filling:

In the same pan, add another tablespoon of oil and sauté the onions until translucent. Add the shrimp and cook until pink. Remove from the pan and set aside. 5. Drain the soaked mung beans and add them to the pan. Stir-fry for a few minutes until slightly softened. Remove from the pan and set aside. 6. In the same pan, add 1-2 tablespoons of oil and pour in 1/4 cup of the batter. Swirl the pan to evenly distribute the batter and let it cook for 2-3 minutes. 7. Add a handful of bean sprouts, green onions, and a few slices of pork belly, shrimp, and sautéed onions on one side of the pancake. Fold the other side over to create a half-moon shape. 8. Cook for another 2-3 minutes until the pancake is crispy and golden brown. Flip over and cook for an additional 2-3 minutes. 9. Repeat the process for the remaining batter and filling ingredients. 10. Serve hot with your choice of dipping sauce, such as fish sauce mixed with lime juice, sugar, and chili. 11.
