Season the crab with salt, black pepper, and cornstarch, making sure it is evenly coated. 4. Heat vegetable oil in a wok or large frying pan over medium-high heat. 5. Fry the crab halves for about 5 minutes or until they turn red and the shell becomes crispy. 6. Remove from heat and set aside.

Preparing the sauce:

1. In the same wok or frying pan, heat 2 tbsp of vegetable oil over medium heat. 2. Add minced garlic, ginger, red chilies, and lemongrass. Stir-fry for 2 minutes until fragrant. 3. Add tomato paste, fish sauce, oyster sauce, and sugar. Mix well. 4. Pour in the chicken broth and let it simmer for 5 minutes. 5.
