2 cinnamon sticks
3 star anise
3 cloves
1kg beef brisket or stewing beef
2.5L water
2tbsp fish sauce
2tbsp soy sauce
1tbsp sea salt
Pho Noodle Bowl:
400g dried flat rice noodles
400g beef sirloin or fillet
1 red onion, thinly sliced
2 red chilies, thinly sliced
1 bunch of spring onions, thinly sliced
1 bunch of coriander, roughly chopped
1 lime, cut into wedges
Instructions
1. Prepare the broth:
In a large pot, add the beef bones, onions, ginger, coriander, cinnamon sticks, star anise, and cloves. Roast them in the oven at 200°C for 30 minutes.
Place the roasted bones and spices into a large stockpot. Add the beef brisket or stewing beef, water, fish sauce, soy sauce, and sea salt. Bring it to a boil, then reduce the heat and let it simmer for 4-5 hours.
Skim off any impurities that rise to the surface of the broth, and continue to simmer for another 3 hours.
Once the broth is done, remove the beef and let it cool. Then, shred the meat and set it aside.
Strain the broth through a fine-mesh sieve and discard the solids. Keep the broth warm on low heat.
2. Prepare the pho noodle bowl:
Soak the dried flat rice noodles in hot water for 15 minutes, then drain and set aside.
Slice the beef sirloin or fillet into thin slices and set them aside.
In a pot of boiling water, cook the rice noodles for 1-2 minutes until they are tender. Drain and divide them into serving bowls.
Place the raw beef slices on top of the noodles.
Heat the broth, and once it is hot, ladle it over the beef slices and noodles. The hot broth will cook the beef slices.
Top the bowl with red onions, red chilies, spring onions, coriander, and a squeeze of lime juice.
3. Serve and enjoy:
Your delicious Vietnamese beef pho is now ready to be served. Mix all the ingredients in the bowl, and enjoy the rich flavors of the broth and tender beef.
