  • 1 tsp ginger-garlic paste
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • 1 tsp red chili powder

For the biryani:

  • 2-3 tbsp ghee or oil
  • 1 onion, thinly sliced
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 2-3 cloves
  • 2-3 green cardamoms
  • 2-3 black peppercorns
  • 2-3 strands of saffron
  • 2 tbsp warm milk

Instructions:

  1. To prepare the rice, rinse it in water until the water runs clear. Soak the rice in water for 30 minutes.
  2. In a pot, bring 2 cups of water to a boil. Add in the bay leaf, cinnamon stick, cloves, cardamom, and salt. Drain the soaked rice and add it to the pot. Cook until the rice is 80% done. Drain the rice and set it aside.
  3. To make the vegetable gravy, heat ghee or oil in a pan. Add in the cumin seeds, bay leaf, cloves, cardamom, and black peppercorns. Once they start to sizzle, add in the onions and sauté until they turn golden brown.
  4. Add in the ginger-garlic paste and cook for a minute. Then, add in the tomatoes and cook until they turn mushy.
  5. Next, add in the turmeric powder, coriander powder, garam masala powder, red chili powder, and salt. Mix well and cook for a few minutes.
  6. Add in the mixed vegetables and a little water if needed. Cover and cook until the vegetables are tender.
  7. Now, in a separate pan, heat the remaining ghee or oil. Add in the thinly sliced onions and cook until they turn golden brown. Remove from heat and set aside.
  8. In a small bowl, soak the saffron strands in warm milk for 10 minutes.
  9. Preheat the oven to 375°F (190°C).
  10. In a baking dish, layer half of the cooked rice. On top of the rice, add the vegetable gravy. Layer the remaining rice on top of the gravy.
  11. Drizzle the saffron milk over the rice and top it off with the golden brown onions.
  12. Cover the baking dish with foil and bake for 25-30 minutes.
  13. Once done, remove from the oven and let it rest for 5 minutes before serving.
