Tamale Filling

- 1 cup of black beans, drained and rinsed - 1 cup of canned corn, drained and rinsed - 1 cup of diced bell peppers - 1 cup of diced red onion - 1 tsp of cumin - 1 tsp of chili powder - 1 tsp of oregano - 1 tbsp of olive oil

Instructions

Masa Dough

1. In a large mixing bowl, combine the masa harina, vegetable broth, coconut oil, garlic powder, onion powder, and salt. 2. Mix the ingredients together until a soft, pliable dough forms.

Tamale Filling

1. In a separate pan, heat the olive oil over medium heat. 2. Add the black beans, corn, bell peppers, red onion, cumin, chili powder, and oregano to the pan and sauté for 5-7 minutes, until the vegetables are tender. 3. Remove the pan from heat and let the filling cool.
