Method:
Step 1: Preparing the potatoes
To start with, wash and peel the baby potatoes. Prick them with a fork and soak them in water for 10 minutes. Then, heat a pan with 1 tbsp of ghee and add the soaked potatoes. Fry them on low heat until they turn golden brown in color. Once done, remove them from the pan and keep them aside.
Step 2: Making the masala paste
In the same pan, add 1 tsp of cumin seeds, cloves, cardamom pods, cinnamon stick, and bay leaf. Let them splutter for a few seconds. In a separate pot, add 2 cups of water and bring it to a boil. Then, add the soaked and drained basmati rice along with some salt. Let it cook for 80% of its time and then drain the excess water. In a deep-bottomed pan, start layering the biryani - first, add a layer of cooked rice, then a layer of the masala paste, followed by a layer of fried potatoes, and repeat until all the ingredients are used up. Pour the yogurt on top and garnish with coriander leaves.
Step 4: Dum cooking
Cover the pan with a lid and place it on a tawa (griddle) over low heat. Let it cook for 20-25 minutes, until the rice is fully cooked and the flavors have infused together. Once done, turn off the heat and let it sit for 5 minutes before serving.
