1 tsp coriander powder

2 tbsp ghee or oil

1 tsp red chili powder
1 tsp cumin powder
1 tsp coriander powder
1 tsp garam masala
1 tsp turmeric powder
1 tsp ginger garlic paste

Instructions
Marinate the vegetables: In a bowl, mix together the ingredients for the marinade. Add the mixed vegetables and mix well. Let it marinate for at least 30 minutes.
Prepare the rice: Rinse the basmati rice until the water runs clear. Soak the rice in water for 30 minutes. In a large pot, bring water to a boil and add the soaked rice. Cook until the rice is about 75% done. Drain the water and set aside.
