  • 1 onion, thinly sliced
  • 1 tomato, chopped
  • 1 green chili, chopped
  • 1 tsp ginger garlic paste
  • 1 tsp biryani masala
  • 1 tsp red chili powder
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1/4 cup yogurt
  • 1/4 cup chopped coriander leaves
  • 1/4 cup chopped mint leaves
  • 2 tbsp ghee or oil
  • Salt to taste

For the marinade:

  • 1 cup yogurt
  • 1 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1 tsp turmeric powder
  • 1 tsp ginger garlic paste
  • Salt to taste

Instructions

  1. Marinate the vegetables: In a bowl, mix together the ingredients for the marinade. Add the mixed vegetables and mix well. Let it marinate for at least 30 minutes.
  2. Prepare the rice: Rinse the basmati rice until the water runs clear. Soak the rice in water for 30 minutes. In a large pot, bring water to a boil and add the soaked rice. Cook until the rice is about 75% done. Drain the water and set aside.
  3. Prepare the vegetables: In a pan, heat ghee or oil. Add cumin seeds and let them splutter. Add onions and sauté until they turn golden brown. Add the chopped tomatoes, green chili, and ginger garlic paste. Cook until the tomatoes are soft. Add the marinated vegetables and cook for a few minutes. Add the biryani masala, red chili powder, cumin powder, coriander powder, garam masala, and turmeric powder. Mix well and cook for a few more minutes.
  4. Layer the biryani: In a large pot, spread a layer of the cooked rice. Add a layer of the cooked vegetables on top. Sprinkle some chopped coriander leaves and mint leaves. Add another layer of rice and repeat the process until all the rice and vegetables are used up.
  5. Seal and cook: Cover the pot with a lid and seal it with aluminum foil. This will help to trap the steam and cook the biryani evenly. Cook on low heat for about 15 minutes.
  6. Serve: Once the biryani is cooked, remove the lid and fluff the rice gently. Serve hot and garnish with more coriander leaves and mint leaves if desired.
