Ingredients:
400g rhubarb, chopped into 2cm pieces
100g unsalted butter, softened
100g caster sugar
2 eggs
100g self-raising flour
1 tsp baking powder
1 tsp vanilla extract
3 tbsp elderflower cordial

Preheat the oven to 180C/160C fan/gas mark 4 and grease a 20cm round cake tin.
In a bowl, cream together the butter and sugar until light and fluffy.
Add the eggs, one at a time, mixing well after each addition.

Add in the vanilla extract and elderflower cordial and mix until the batter is smooth.
