The Origins of Kazandibi

The Legend

Legend has it that the kazandibi was created by accident in the late 1800s in Istanbul. The story goes that a cook in the palace kitchen was experimenting with milk, sugar, and rice flour to make a pudding. In a hurry, he accidentally left the pot on the stove for too long, resulting in a burnt layer at the bottom. Not wanting to waste food, he scraped off the burnt layer and served it to the palace guests. To his surprise, the guests loved the dessert and asked for more. Thus, the kazandibi was born.

The Reality

While the legend may be charming, the kazandibi actually has a more practical origin. In the Ottoman Empire, cooks were not allowed to waste food, especially in the palace kitchen. So, when a custard pudding was left with a burnt layer at the bottom, the cooks would scrape it off and serve it as a separate dessert. This became so popular that it eventually became a standalone dish known as kazandibi.

The Recipe

Ingredients

To make kazandibi, you will need:
  • Milk: 1 liter
  • Sugar: 1 cup
  • Rice Flour: 1 cup
  • Cornstarch: 1 tablespoon
  • Vanilla Extract: 1 teaspoon
  • Butter: 1 tablespoon
