  • 1 tbsp oil
  • 1 cup water

For the filling:

  • 2 medium-sized potatoes, boiled and mashed
  • 1 small onion, finely chopped
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1 tsp red chili powder
  • 1 tsp amchur powder (dried mango powder)
  • 1 tbsp coriander leaves, finely chopped
  • 2 tbsp oil
  • Salt to taste

Instructions:

  1. In a mixing bowl, combine the flour, salt, and oil. Add water gradually and knead the dough until it becomes smooth and elastic. Cover it with a damp cloth and let it rest for 15 minutes.
  2. In a pan, heat 2 tbsp of oil and add the chopped onions. Sauté until they turn translucent. Add cumin powder, coriander powder, garam masala, red chili powder, and amchur powder. Sauté for a minute.
  3. Add the mashed potatoes, coriander leaves, and salt. Mix well and cook for 2-3 minutes. Remove from heat and let it cool down.
  4. Divide the dough into equal-sized balls. Roll each ball into a small circle and place a spoonful of the potato filling in the center.
  5. Bring the edges of the dough together and seal the filling inside. Flatten the dough and roll it out into a round shape, approximately ¼ inch thick.
  6. Heat a skillet or tawa over medium heat and place the rolled out dough on it. Cook for 1-2 minutes on each side, adding oil if necessary, until it turns golden brown and crisp.
  7. Remove from heat and serve hot with your favorite curry or chutney.
