2 cloves of garlic, minced
1 tsp smoked paprika
1 tsp dried thyme
1 tsp dried rosemary
1/2 tsp black pepper
Mashed Sweet Potatoes
2 large sweet potatoes
1/4 cup non-dairy milk
2 tbsp vegan butter
1 tsp garlic powder
1 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
Cranberry Sauce
1 cup fresh or frozen cranberries
1/4 cup orange juice
2 tbsp maple syrup
1 tsp orange zest
Instructions
1. Prepare the tempeh marinade
In a shallow dish, mix together the soy sauce, maple syrup, minced garlic, smoked paprika, dried thyme, dried rosemary, and black pepper. Cut the tempeh into thin slices and place into the marinade, making sure each slice is coated. Let marinate for at least 30 minutes, or overnight for a stronger flavor.
2. Roast the sweet potatoes
Preheat your oven to 400°F. Cut the sweet potatoes into cubes and place on a baking sheet lined with parchment paper. Drizzle with olive oil and season with garlic powder, dried thyme, salt, and black pepper. Roast for 25-30 minutes, until tender.
3. Make the cranberry sauce
In a small saucepan, combine the cranberries, orange juice, maple syrup, and orange zest. Bring to a boil, then reduce the heat and let simmer for 10-15 minutes, until the cranberries burst and the mixture thickens.
4. Cook the tempeh
Heat a large skillet over medium-high heat. Add the marinated tempeh slices and cook for 2-3 minutes on each side, until browned and crispy.
5. Assemble the dish
On a large platter, place the roasted sweet potatoes, cooked tempeh, and cranberry sauce. Serve hot and enjoy your delicious thanksgiving tempeh dish!
