Don't let your Thanksgiving leftovers go to waste! Use them to make these delicious breakfast sandwiches that are perfect for a lazy morning after the holiday.

Ingredients:

For the turkey:

- 12-14 pound whole turkey - 2 tablespoons kosher salt - 1 tablespoon ground black pepper - 2 tablespoons garlic powder - 2 tablespoons poultry seasoning - 2 tablespoons onion powder - 1 tablespoon paprika - 1 tablespoon ground mustard - 2 tablespoons olive oil - 3-4 gallons of peanut or vegetable oil

For the brine:

- 1 gallon of water - 1 cup of kosher salt - 1/2 cup of sugar - 1 tablespoon of black peppercorns - 3-4 bay leaves - 1 teaspoon of ground sage

For the injection:

- 1/2 cup of butter - 1/4 cup of olive oil - 1/4 cup of apple cider vinegar - 1 tablespoon of Worcestershire sauce - 1 tablespoon of garlic powder - 1 tablespoon of poultry seasoning

Instructions:

1. Brine the turkey

Begin by preparing the brine for the turkey. In a large pot, combine all the brine ingredients and bring it to a boil. Once boiling, remove from heat and let the brine cool to room temperature. Place the turkey in a large container or brining bag and pour the brine over it. Make sure the turkey is fully submerged in the brine, then cover and refrigerate for at least 8 hours, or overnight.

2. Prepare the injection

In a small saucepan, heat all the ingredients for the injection over medium heat until the butter is melted and the ingredients are well combined. Let the injection cool to room temperature.

3. Season the turkey

Remove the turkey from the brine and pat it dry with paper towels. In a small bowl, mix together the kosher salt, black pepper, garlic powder, poultry seasoning, onion powder, paprika, and ground mustard. Rub the spice mixture all over the turkey, including inside the cavity. Use your fingers to gently lift the skin and rub the spice mixture under the skin as well.

4. Inject the turkey

Using a meat injector, inject the cooled injection mixture into different parts of the turkey, including the breasts, thighs, and legs. This will add flavor and moisture to the turkey while it cooks.

5. Prepare the fryer

Heat the peanut or vegetable oil in a large turkey fryer or deep pot to 375°F. Use a thermometer to monitor the oil temperature and make sure it stays between 350-375°F. It is important to not let the oil get too hot, as it can result in a dangerous situation.

6. Fry the turkey

Carefully lower the turkey into the hot oil, using a turkey fryer basket or metal tongs. Fry for about 3-4 minutes per pound, or until the internal temperature reaches 165°F. Once cooked, carefully remove the turkey from the oil and let it rest for 20-30 minutes before carving.

7. Serve and enjoy!

Carve the turkey and serve it with your favorite Thanksgiving sides. Your guests will be impressed by the crisp and flavorful fried turkey, and it will surely become a new holiday favorite.
