Ingredients
Marinade:
1 kg bone-in chicken pieces
1 cup plain yogurt
2 tablespoons tandoori masala
1 tablespoon ginger paste
1 tablespoon garlic paste
1 teaspoon red chili powder
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1 tablespoon garam masala
1 tablespoon lemon juice
Salt to taste
Garnish:
1 lemon, cut into wedges
Fresh coriander leaves, chopped
Onion rings
Instructions
Clean and prepare the chicken pieces by washing them and removing any excess fat. Make small cuts on the chicken to allow the marinade to penetrate.
In a bowl, mix together the yogurt, tandoori masala, ginger paste, garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala, lemon juice, and salt.
Add the chicken to the marinade and mix well, making sure each piece is coated. Cover and let it marinate in the refrigerator for at least 2 hours, or preferably overnight for the best flavor.
Preheat your oven to 375°F (190°C).
Line a baking sheet with aluminum foil and place a wire rack on top.
Remove the chicken from the marinade and place it on the wire rack, making sure to shake off any excess marinade.
Bake the chicken for 25-30 minutes, or until it is fully cooked and slightly charred on the outside.
Once done, remove from the oven and let it rest for 5 minutes.
Garnish with lemon wedges, fresh coriander leaves, and onion rings before serving.
This tandoori chicken roast recipe is perfect for a special occasion or even for a weeknight dinner. The marinade adds layers of flavor to the chicken, and the charred bits give it a delicious smoky taste. Serve it with a side of naan bread and some raita for a complete and authentic Indian meal.
