Ingredients:

  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup jam or jelly of your choice
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • Fresh berries for decoration (optional)

Instructions:

To begin, preheat your oven to 375°F and line a 10x15 inch jelly roll pan with parchment paper. In a large mixing bowl, beat the eggs and 1/2 cup of granulated sugar on high speed until thick and pale in color. This should take about 5 minutes with a hand mixer or 3 minutes with a stand mixer. The mixture should fall back into the bowl in a ribbon-like consistency.

Next, sift in 1/2 cup of all-purpose flour and gently fold it into the egg mixture using a spatula. Make sure to only fold until the flour is fully incorporated, being careful not to overmix as this will deflate the batter.

Then, add in 1 teaspoon of vanilla extract and 1/4 teaspoon of salt and gently fold them into the batter. Pour the batter into the prepared pan and spread it evenly with a spatula.

Bake the cake for 12-15 minutes, or until the edges are lightly golden and the center of the cake springs back when lightly touched. While the cake is baking, prepare a clean kitchen towel by sprinkling it with 1/4 cup of powdered sugar.

Once the cake is done, immediately invert it onto the prepared towel and gently remove the parchment paper. Starting at the shorter end, carefully roll the cake and towel together into a log shape. Let the cake cool completely in the rolled-up position.

While the cake is cooling, prepare your filling by whipping 1 cup of heavy cream in a mixing bowl until stiff peaks form. Fold in 1/2 cup of jam or jelly of your choice until well combined.

Once the cake is cooled, carefully unroll it and spread the filling evenly over the cake, leaving a small border around the edges. If desired, add fresh berries on top of the filling for some extra flavor and decoration.

Roll the cake back into a log shape, this time without the towel. Wrap the roll in plastic wrap and refrigerate for at least 1 hour before serving. When ready to serve, slice into pieces and enjoy your delicious and impressive homemade Swiss roll!
