Ingredients:
Main Ingredients:
500g mixed dried fruit (raisins, sultanas, currants)
75g chopped dried apricots
75g chopped dried cranberries
75g chopped dried figs
75g chopped dates
1 large apple, grated
1 large carrot, grated
1 large orange, zest and juice
150ml brandy or rum
150g dark brown sugar
150g self-raising flour
1 tsp mixed spice
1 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground ginger
Sauce Ingredients:
200g dark chocolate
100ml double cream
2 tbsp golden syrup
Instructions:
In a large mixing bowl, combine all the main ingredients except for the flour and spices. Mix well and let it sit for at least an hour, or overnight if possible.
Once the fruits have soaked up all the juices, add in the flour and spices. Mix until well combined.
Grease a 1.2 litre pudding basin and pour in the pudding mixture. Cover with a double layer of greased greaseproof paper and a layer of foil, making sure to secure it tightly.
Place the pudding in a large saucepan with enough water to come halfway up the basin. Bring the water to a boil and then reduce the heat to a simmer. Cover and let it steam for 6 hours, checking occasionally to make sure the water hasn't evaporated.
After 6 hours, remove the pudding from the saucepan and let it cool completely before removing the paper and foil.
For the sauce, melt the dark chocolate in a heatproof bowl over a pan of simmering water. Once melted, add in the double cream and golden syrup. Stir until well combined.
Place the pudding on a serving dish and drizzle the sauce over it. Serve with some vanilla ice cream or whipped cream for an extra indulgent treat.
Enjoy your suet-free Christmas pudding and have a merry and delicious Christmas!
