For the Rice:
2 cups basmati rice
4 cups water
1 tsp cumin seeds
1 inch cinnamon stick
3-4 cloves

1 tsp red chili powder
1 tsp garam masala

2 tbsp ghee
1 onion, thinly sliced
1/4 cup cashews
1/4 cup raisins
1/4 cup fresh coriander leaves, chopped
1/4 cup fresh mint leaves, chopped
Instructions
Step 1: Rinse the basmati rice until the water runs clear. Soak the rice in water for about 20 minutes.
Step 2: In a pot, add the soaked rice, water, cumin seeds, cinnamon stick, cloves, cardamom pods, and salt. Bring to a boil, then reduce the heat and let it simmer for about 10 minutes. Once done, drain the rice and set aside.
