Instructions

  1. Start by soaking the basmati rice in water for about 20 minutes. Drain the water and set it aside.
  2. In a large pot, heat the ghee or oil over medium heat. Add in the cinnamon stick, cloves, cardamom pods, bay leaf, cumin seeds, coriander seeds, fennel seeds, and black peppercorns. Let them sizzle for about a minute until fragrant.
  3. Add in the thinly sliced onion and green chilies to the pot and sauté until the onions turn translucent.
  4. Add in the chopped mint and cilantro leaves and sauté for another minute.
  5. Next, add in the mixed vegetables and sauté for a few minutes until they are slightly cooked.
  6. Now, add in the soaked and drained rice to the pot and stir it with the vegetables and spices.
  7. Add in the turmeric powder, red chili powder, garam masala powder, and salt to the pot and mix well.
  8. Finally, add in 4 cups of water to the pot and give it a gentle stir. Bring the water to a boil and then reduce the heat to low.
  9. Cover the pot with a lid and let the biryani cook for about 15-20 minutes or until the rice is fully cooked and the water is absorbed.
  10. Once done, turn off the heat and let the biryani sit for 5 minutes.
  11. Fluff the rice with a fork and garnish with fried onions (optional).
  12. Your delicious South Indian style veg biryani is now ready to be served hot with raita or any other side dish of your choice.
