1 tablespoon oil
1/4 teaspoon mustard seeds
1/4 teaspoon cumin seeds
1/4 teaspoon urad dal
1/4 teaspoon chana dal
1-2 dried red chilies
Curry leaves
Instructions:
1. Start by boiling the potatoes in a pressure cooker or a pot until they are soft. Once done, let them cool down, peel and chop them into cubes.
2. In a pan, heat 2 tablespoons of oil and add mustard seeds, cumin seeds and asafoetida. Let them crackle.
3. Add chopped onions and sauté until they turn translucent. Then, add the ginger-garlic paste and green chilies. Sauté for a minute.
4. Add the chopped tomatoes and cook until they turn soft and mushy.
5. Now, add the turmeric powder, red chili powder, coriander powder and garam masala powder. Mix well and cook for 1-2 minutes.
6. Add the chopped potatoes and mix until they are well coated with the masala. Add salt to taste and a splash of water, if needed. Let it cook for 2-3 minutes.
7. In a separate pan, heat 1 tablespoon of oil and add the mustard seeds, cumin seeds, urad dal, chana dal, dried red chilies and curry leaves. Let them crackle and then pour this tadka/tempering over the potato masala.
8. Give it a final mix and garnish with coriander leaves.
9. Serve hot with roti, naan or rice.
