For the beef marination:

  • 1 kg beef, cut into bite-sized pieces
  • 1 cup yogurt
  • 2 tablespoons ginger-garlic paste
  • 1 tablespoon red chili powder

  • 1 teaspoon garam masala powder
  • 1 teaspoon cumin powder
  • 2 tablespoons lemon juice
  • Salt to taste

For the biryani:

  • 3 cups basmati rice, washed and soaked for 30 minutes
  • 4 tablespoons ghee
  • 4-5 cloves
  • 4-5 green cardamoms
  • 1 cinnamon stick
  • 2 bay leaves
  • 1 large onion, thinly sliced
  • 2-3 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1 cup fried onions
  • 1 cup chopped tomatoes
  • 1 tablespoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon cumin powder
  • 1 cup chopped coriander leaves
  • 1 cup chopped mint leaves
  • Salt to taste
  • 1/4 cup milk
  • A pinch of saffron
  • 1 tablespoon rose water

Instructions:

1. Marinating the beef:

To prepare the marination, in a large bowl, mix together the yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala powder, cumin powder, lemon juice, and salt. Add the beef pieces and coat them well with the marinade. Cover and let it marinate in the fridge for at least 2 hours or preferably overnight.

2. Preparing the rice:

In a pot, add enough water and bring it to a boil. Drain the soaked rice and add it to the boiling water along with a teaspoon of salt. Cook the rice until it is 3/4th done. Drain the rice and keep it aside.

3. Cooking the beef:

In a large pot or Dutch oven, heat ghee over medium-high heat. Add the cloves, green cardamoms, cinnamon stick, and bay leaves and sauté for a minute. Then add the sliced onions and green chilies and cook until the onions turn golden brown. Add the ginger-garlic paste and cook until the raw smell disappears. Now add the marinated beef and cook until it is tender. Add the fried onions, chopped tomatoes, red chili powder, turmeric powder, garam masala powder, cumin powder, coriander leaves, mint leaves, and salt. Mix well and let it cook for 5-7 minutes.

4. Layering the biryani:

In a separate pot, spread a layer of rice at the bottom. Then add a layer of the cooked beef mixture. Continue layering with rice and beef until all the rice and beef are used up. In a small bowl, mix together the milk, saffron, and rose water. Pour this over the layered biryani. Cover the pot with a lid and cook on low heat for 15-20 minutes or until the rice is fully cooked and the flavors are well-incorporated.

5. Serving:

Once the biryani is done, let it rest for 10 minutes. Then gently mix the layers and serve hot with raita and pickle.
