  3. Clean the squid and remove the head and tentacles, reserving the body. Score the inside of the squid in a crosshatch pattern, being careful not to cut all the way through.

  6. Cover the squid completely with the remaining sea salt, making sure there are no gaps.

  10. Remove from the oven and let it rest for 10 minutes.
