- 500g mixed dried fruit - 250g raisins - 250g sultanas - 125g currants - 100g glace cherries - 100g mixed peel - 1 tbsp treacle - 1 tbsp honey - 1 tbsp golden syrup - 1 tbsp brandy - 250g unsalted butter - 250g dark brown sugar - 4 eggs - 250g plain flour - 2 tsp mixed spice - 1 tsp cinnamon - 1 tsp nutmeg - 1 tsp ground ginger - 1 tsp baking powder

1. Preheat your oven to 150°C and line a deep cake tin with baking parchment. 2. In a large mixing bowl, combine the dried fruit, raisins, sultanas, currants, glace cherries, and mixed peel. 3. In a separate saucepan, melt the butter, then add in the treacle, honey, golden syrup, and brandy. Stir until well combined. 4. Pour the warm mixture over the dried fruits and stir until all the fruit is coated. 5. In another bowl, whisk together the eggs and dark brown sugar until light and fluffy. 6.
