Ingredients

Ribbon Biscuits:

  • 1 cup all-purpose flour
  • 1/2 cup rice flour
  • 1/2 cup corn flour
  • 1/2 cup sugar
  • 1/2 cup coconut milk
  • 1/4 cup water
  • 1/4 tsp salt
  • Chinese New Year themed cookie cutters
  • Red food coloring

Coconut Filling:

  • 1 cup grated coconut
  • 1/2 cup sugar
  • 1/4 cup water

Instructions

  1. In a mixing bowl, combine the all-purpose flour, rice flour, corn flour, sugar, and salt. Mix well.
  2. Add in the coconut milk and water to the dry ingredients and mix until a smooth batter is formed.
  3. Divide the batter into two portions. Add a few drops of red food coloring to one portion and mix well to create a red batter.
  4. Heat a ribbon biscuit mold or a flat iron pan over medium heat. Brush the mold/pan with some oil to prevent the batter from sticking.
  5. Place a spoonful of the white batter onto the mold/pan and use a spoon to spread it evenly into a thin layer.
  6. Place a spoonful of the red batter on top of the white batter and use a spoon to spread it evenly into a thin layer as well.
  7. Cook for about 1-2 minutes or until the edges start to brown.
  8. Remove the biscuit from the mold/pan and immediately use a Chinese New Year themed cookie cutter to cut out the desired shape.
  9. Repeat steps 4-8 until all the batter is used up.
  10. For the coconut filling, mix grated coconut, sugar, and water in a saucepan and cook over low heat until the mixture thickens.
  11. Spoon the coconut filling onto the back of a white biscuit and top it with a red biscuit to form a sandwich.
  12. Allow the biscuits to cool and the filling to set before serving.
