Instructions

1. Preheat the oven to 375°F.

Place the scooped out eggplant halves on a baking sheet and season with salt and pepper.

2. In a small bowl, mix together the breadcrumbs, parmesan cheese, basil, and parsley.

In a separate pan, heat the olive oil over medium heat and sauté the minced garlic until fragrant. Remove from heat and add the breadcrumb mixture, stirring until well combined.

3. Spoon the breadcrumb mixture into the eggplant halves, pressing down gently to form a compact filling.

Bake the eggplant for 25-30 minutes, or until the filling is golden brown and the eggplant is tender.

4. While the eggplant is baking, prepare the tomato sauce.
