Ingredients

For the beef:

  • 1 (3-pound) beef chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

For the marinade:

  • 1/4 cup balsamic vinegar
  • 1/4 cup red wine
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, mix together the salt, black pepper, thyme, rosemary, oregano, garlic powder, and onion powder to create a dry rub for the beef.
  3. Pat the beef dry with paper towels and rub the dry rub mixture all over the beef, making sure to cover all sides.
  4. In a large Dutch oven, heat the olive oil over medium-high heat. Once hot, add the beef and sear on all sides until browned, about 5 minutes per side.
  5. In the meantime, prepare the marinade by mixing together the balsamic vinegar, red wine, soy sauce, minced garlic, honey, Dijon mustard, salt, and black pepper in a small bowl.
  6. Once the beef is browned, pour the marinade over the beef in the Dutch oven. Cover and place in the preheated oven.
  7. Cook for 2 1/2 to 3 hours, or until the beef is tender and easily shreds with a fork.
  8. Remove the beef from the Dutch oven and let it rest for 10 minutes before slicing and serving.
  9. Optional: To create a flavorful gravy, strain the leftover juices from the Dutch oven and cook over medium heat until thickened.
  10. Serve the sliced beef with the gravy and your choice of sides.
