For the beef:
1 (3-pound) beef chuck roast
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
For the marinade:
1/4 cup balsamic vinegar
1/4 cup red wine
1/4 cup soy sauce
2 cloves garlic, minced
1 tablespoon honey
1 tablespoon Dijon mustard
1 teaspoon salt
1 teaspoon black pepper
Instructions
Preheat your oven to 350°F (175°C).
In a small bowl, mix together the salt, black pepper, thyme, rosemary, oregano, garlic powder, and onion powder to create a dry rub for the beef.
Pat the beef dry with paper towels and rub the dry rub mixture all over the beef, making sure to cover all sides.
In a large Dutch oven, heat the olive oil over medium-high heat. Once hot, add the beef and sear on all sides until browned, about 5 minutes per side.
In the meantime, prepare the marinade by mixing together the balsamic vinegar, red wine, soy sauce, minced garlic, honey, Dijon mustard, salt, and black pepper in a small bowl.
Once the beef is browned, pour the marinade over the beef in the Dutch oven. Cover and place in the preheated oven.
Cook for 2 1/2 to 3 hours, or until the beef is tender and easily shreds with a fork.
Remove the beef from the Dutch oven and let it rest for 10 minutes before slicing and serving.
Optional: To create a flavorful gravy, strain the leftover juices from the Dutch oven and cook over medium heat until thickened.
