Curry Sauce:

  • 2 tbsp oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tomato, finely chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1 cup coconut milk
  • 1 cup water
  • Salt to taste

Instructions:

1. Prepare the Potatoes:

In a large pan, heat 2 tbsp of oil over medium heat. Add cumin seeds and let them sizzle for a few seconds. Then add the chopped onion and sauté until they turn translucent. Next, add the minced garlic, grated ginger, and green chili. Sauté for another minute. Add the diced potatoes and stir well. Cover the pan and let the potatoes cook for 5 minutes.

2. Prepare the Curry Sauce:

In a separate pan, heat 2 tbsp of oil over medium heat. Add cumin seeds and let them sizzle for a few seconds. Then add the chopped onion and sauté until they turn translucent. Next, add the minced garlic, grated ginger, and chopped tomato. Sauté for another minute. Add the spices (coriander powder, turmeric powder, red chili powder, and garam masala) and stir well. Add coconut milk and water. Let the sauce simmer for 5 minutes.
