200g of butter, softened
200g of light brown sugar
4 eggs
200g of self-raising flour
1 tsp of mixed spice
1 tsp of ground cinnamon
1 tsp of vanilla extract
1 tbsp of milk
Instructions:
Preheat your oven to 150°C and line a cake tin (about 20cm in diameter) with parchment paper.
In a large mixing bowl, combine the mixed dried fruit, glace cherries, and chopped almonds.
In a separate bowl, cream together the butter and sugar until light and fluffy.
Beat in the eggs one at a time, making sure each one is well incorporated before adding the next.
Sift in the self-raising flour, mixed spice, and ground cinnamon into the butter mixture and gently fold until well combined.
