How to Make Prosecco Christmas Pudding
Ingredients:
To make this festive dessert, you will need:
1 1/2 cups raisins
1 cup candied cherries
1 cup dried cranberries
1 cup dried apricots, chopped
1/2 cup candied ginger, chopped
1/2 cup chopped almonds
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon grated nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
1 cup unsalted butter
1 cupgranulated sugar
4 large eggs
1/2 cup prosecco
1/4 cup brandy
Instructions:
In a large mixing bowl, combine the raisins, candied cherries, dried cranberries, dried apricots, candied ginger, and chopped almonds. Mix well.
In a separate bowl, whisk together the flour, baking powder, ground cinnamon, nutmeg, ground ginger, and salt.
In a third bowl, beat the butter and granulated sugar until light and fluffy. Add in the eggs, one at a time, beating well after each addition.
Gradually add the dry ingredients to the butter and sugar mixture, alternating with the prosecco and brandy. Mix until well combined.
Pour the batter over the fruit and nut mixture and stir until everything is evenly coated.
Grease a 1.5 quart pudding mold and pour the batter into it.
Cover the mold with a double layer of parchment paper and secure with a string or rubber band.
Place the mold in a large pot and fill the pot with enough water to come halfway up the sides of the mold. Cover the pot and steam the pudding for 4 hours, adding more water as needed to maintain the water level.
Once done, remove the pudding from the mold and let it cool for 10 minutes.
Serve warm with a dollop of whipped cream or brandy sauce.
