For Masala Paste:

Instructions

Making the Masala Paste:

  1. In a pan, heat 1 tbsp of oil and add in 1 tsp cumin seeds and 1 tsp coriander seeds. Let them sizzle for a few seconds.
  2. Next, add in the chopped onions and sauté until they turn translucent.
  3. Add in the chopped tomatoes and cook until they turn mushy.
  4. Now, add in the chopped ginger, garlic, and green chili. Sauté for a few minutes.
  5. Add in the garam masala powder, turmeric powder, and red chili powder. Mix well and cook for another minute.
  6. Turn off the heat and let the mixture cool down. Once cooled, grind it into a smooth paste using a blender or food processor.

Making the Potato Peas Masala:

  1. In a separate pan, heat 2 tbsp of oil and add in 1 tsp mustard seeds, 1 tsp cumin seeds, and 1 bay leaf. Let them sizzle for a few seconds.
  2. Add in the cubed potatoes and sauté for a few minutes until they start to turn golden brown.
  3. Add in the frozen peas and mix well.
  4. Add in the ground masala paste and mix well. Cook for a few minutes until the potatoes are fully cooked.
  5. Add in 1 tsp of salt and mix well.
  6. Pour in 1 cup of water and give it a good stir.
  7. Cover the pan and let the potatoes and peas masala simmer for 5-10 minutes.
  8. Once the water has evaporated and the curry has thickened, turn off the heat.

Serving Suggestions:
