How to Make the Perfect Portuguese Fish Pie

Ingredients:

  • 1 pound white fish fillets (cod or haddock work well)
  • 1 pound potatoes, peeled and diced
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1/2 cup carrots, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup seafood stock
  • 1/4 cup white wine
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh chives, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh thyme, chopped
  • Salt and pepper to taste
  • 1 sheet of puff pastry, thawed
  • 1 egg, beaten

Instructions:

1. Preheat your oven to 375°F (190°C). 2. In a large pot, add the diced potatoes and enough water to cover them. Bring to a boil and cook until the potatoes are tender, about 10-15 minutes.
