1. In a saucepan, heat the milk and lemon zest until it comes to a simmer. 2. In a separate bowl, whisk together the egg yolks, whole egg, sugar, cornflour, and vanilla extract until well combined. 3. Slowly pour the hot milk into the egg mixture while whisking continuously. 4. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and coats the back of a spoon. 5. Remove from heat and let it cool for a few minutes.

Assembling the tarts:
