The History of Portuguese Custard Tarts
The Origins of Pastel de Nata
Legend has it that the recipe for Portuguese custard tarts was created by Catholic monks in the 18th century. These monks used egg yolks to starch their clothes, leaving them with a surplus of egg whites. In order to avoid wasting these whites, they came up with the idea of using them to make pastries. The original recipe for Pastel de Nata was kept a secret within the monastery until the 19th century when the monks sold the recipe to a sugar refinery outside of the monastery.
Pastel de Nata Becomes Popular
It wasn't until the 1920s when the sugar refinery started selling the tarts to the public that they gained popularity. In the 1940s, a bakery in Lisbon, Portugal called "Pastéis de Belém" started making and selling the tarts, becoming the first and most famous place to serve them. Today, Pastéis de Belém still uses the original recipe and serves the tarts to thousands of visitors every day.
