Use your hands to thoroughly mix all of the ingredients together, making sure the seasonings are evenly distributed throughout the meat.

Next, attach the sausage stuffing tube to your meat grinder according to the manufacturer's instructions. Feed the prepared casings onto the tube, leaving a few inches of empty casing at the end. Begin to push the sausage mixture through the grinder and into the casings, using your other hand to guide the sausage as it fills the casing. Once the casing is filled, tie off the other end with the butcher's twine and repeat the process until all of the sausage has been used.
