For the biryani:
2 tbsp vegetable oil
2 onions, sliced
2 tbsp ghee
1 tbsp ginger paste
1 tbsp garlic paste
2 tomatoes, chopped
1 tsp red chili powder
1 tsp garam masala
1 tsp cumin powder
1 tsp coriander powder
1/2 cup fresh coriander leaves, chopped
Salt to taste
Directions
Step 1: Marinate the chicken
In a large bowl, mix together the chicken pieces, yogurt, ginger paste, garlic paste, turmeric powder, red chili powder, garam masala, cumin powder, coriander powder, lemon juice, and salt. Cover the bowl and refrigerate for at least 2 hours or overnight.
Step 2: Prepare the rice
In a large pot, bring 4 cups of water to a boil. Add the soaked rice, cumin seeds, cloves, cardamom pods, cinnamon stick, and salt. Cook for 5-6 minutes, until the rice is parboiled. Drain the rice and set aside.
Step 3: Cook the biryani
In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Add the sliced onions and sauté until they are golden brown. Remove the onions from the pot and set aside.
In the same pot, heat ghee over medium-high heat. Add the marinated chicken and cook for 5-6 minutes, until the chicken is almost cooked through. Remove the chicken from the pot and set aside.
In the same pot, add ginger paste and garlic paste. Sauté for a minute and add chopped tomatoes, red chili powder, garam masala, cumin powder, coriander powder, and salt. Cook for 2-3 minutes, until the tomatoes are soft and the spices are fragrant.
Add the cooked chicken back into the pot and mix well with the masala. Cover the pot and cook for 5-6 minutes, until the chicken is fully cooked.
Step 4: Layer and cook the biryani
In a separate pot, layer the chicken masala, parboiled rice, and fried onions. Repeat the layers until all the ingredients are used up, ending with a layer of fried onions on top.
Cover the pot and cook on medium-low heat for 10-15 minutes, until the rice is fully cooked and all the layers are heated through.
Step 5: Serve and enjoy
Garnish with chopped coriander leaves and serve hot with raita (yogurt dip) or your favorite chutney.
