Ingredients
For the noodles:
1 lb all-purpose flour
1/2 cup cold water
1 tsp salt
For the broth:
1 lb beef bones
1 lb pork bones
1 lb chicken bones
4 cloves garlic, crushed
2 inches ginger, sliced
1 tbsp Sichuan peppercorns
2 tbsp soy sauce
1 tbsp dark soy sauce
1 tbsp Shaoxing wine
2 tsp sugar
1 tsp salt
Instructions
Making the noodles:
In a large bowl, mix together the flour and salt. Slowly add in the cold water and mix until a dough forms.
Knead the dough on a floured surface for about 10 minutes, until it becomes smooth and elastic.
Cover the dough and let it rest for 30 minutes.
Roll out the dough into a thin sheet, about 1/8 inch thick.
Using a sharp knife, cut the dough into thin strips. You can also use a pasta machine to cut the noodles.
Spread the noodles on a floured surface and let them dry for about 30 minutes.
Bring a pot of water to a boil and add in the noodles. Cook for about 5 minutes, until the noodles are al dente.
Drain the noodles and rinse with cold water to prevent them from sticking.
Making the broth:
In a large pot, add the beef, pork, and chicken bones. Cover with water and bring to a boil. Skim off any foam that rises to the surface.
Add in the garlic, ginger, and Sichuan peppercorns. Reduce the heat to low and let it simmer for 2-3 hours.
Remove the bones and strain the broth through a fine-mesh strainer.
Return the broth to the pot and add in the soy sauce, dark soy sauce, Shaoxing wine, sugar, and salt. Let it simmer for another 30 minutes.
Taste the broth and adjust the seasoning if needed.
