Ingredients:
For the marinade:
1 pound of medium-sized shrimp, peeled and deveined
1 tablespoon of lemon juice
1 teaspoon of turmeric powder
1 teaspoon of red chili powder
1 teaspoon of coriander powder
1 teaspoon of cumin powder
1 teaspoon of garam masala
1 teaspoon of salt
For the curry:
2 tablespoons of vegetable oil
1 large onion, finely chopped
2 cloves of garlic, minced
1 inch of ginger, grated
2-3 green chilies, chopped
1 teaspoon of cumin seeds
1 teaspoon of coriander seeds
1 teaspoon of turmeric powder
1 teaspoon of red chili powder
1 teaspoon of garam masala
1 cup of tomato puree
1 cup of coconut milk
1 cup of water
Salt to taste
Instructions:
To begin, marinate the shrimp in lemon juice, turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt for at least 15 minutes. This will ensure that the shrimp is tender and packed with flavor.
In a large pan, heat the vegetable oil over medium heat and add in the cumin and coriander seeds. Once they start to sizzle, add in the chopped onions and sauté until they turn translucent. Then, add in the minced garlic, grated ginger, and chopped green chilies. Sauté for another minute, until the raw smell of the garlic goes away.
Add in the turmeric powder, red chili powder, and garam masala and mix well with the onion mixture. Then, pour in the tomato puree and cook for 3-4 minutes, until the oil starts to separate from the sides.
Next, add in the marinated shrimp and cook for 2-3 minutes, until they turn pink and are almost cooked through. Then, pour in the coconut milk and water and let it come to a boil. Season with salt to taste.
Reduce the heat to low and let the curry simmer for 5-7 minutes, until the shrimp is fully cooked and the sauce has thickened. Garnish with fresh coriander leaves and serve hot with rice or naan bread.
