First, combine all the ingredients for the sausage in a large mixing bowl. Make sure the spices are evenly distributed throughout the mixture. Next, take your hog casings and rinse them thoroughly with cold water. This will remove any excess salt and help them slide onto the sausage stuffer more easily. Once your casings are rinsed, carefully thread them onto the sausage stuffer. Begin filling the casings with the sausage mixture, making sure to leave enough room for the sausages to expand while cooking. Once all the sausage is stuffed, tie off the ends of the casings and use a needle to poke small holes throughout the sausages. If using a smoker, follow the manufacturer's instructions for setting the temperature and adding the wood chips. Place the sausages on the smoker or grill and let them smoke for about 2 hours, or until they reach an internal temperature of 160°F. Keep an eye on the temperature and add more wood chips as needed to maintain the smoke. Once the sausages are done, remove them from the heat and let them rest for about 10 minutes before slicing and serving.
