Ingredients

For the dough:

  • 2 cups of all-purpose flour
  • 1 teaspoon of salt
  • 1/4 cup of vegetable oil
  • 1/2 cup of warm water

For the filling:

  • 1 cup of cooked and shredded chicken or beef
  • 1/2 cup of diced potatoes
  • 1/2 cup of diced carrots
  • 1/2 cup of frozen peas
  • 1 small onion, finely chopped
  • 2 cloves of minced garlic
  • 1 teaspoon of cumin powder
  • 1 teaspoon of chili powder
  • 1 teaspoon of paprika
  • 1/2 teaspoon of dried oregano
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of chopped fresh cilantro
  • 1 tablespoon of vegetable oil

Instructions

Making the dough:

1. In a large mixing bowl, combine the flour and salt. 2. Slowly add in the vegetable oil and mix until the mixture becomes crumbly. 3. Gradually add in the warm water and knead the dough until it becomes smooth and elastic. 4. Cover the dough with a damp cloth and let it rest for 30 minutes.

Making the filling:

1. Heat 1 tablespoon of vegetable oil in a large pan over medium heat. 2. Add in the diced potatoes and carrots, and cook for 5 minutes. 3. Next, add in the onion and garlic and cook until they become translucent. 4. Add in the cumin powder, chili powder, paprika, oregano, salt, and black pepper. Mix well. 5. Stir in the peas and cooked chicken or beef. Cook for an additional 5 minutes. 6. Lastly, add in the chopped cilantro and mix well. Remove from heat and let the filling cool down.

Assembling the samosas:

1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. 2. Divide the dough into 10 equal portions and roll each portion into a ball. 3. Roll out each dough ball into a thin circle. 4. Cut the circle in half and moisten the edges with water. 5. Take one half and fold it like a cone, sealing the edges to form a triangle. 6. Fill the cone with the cooled down filling and seal the open edge with water. 7. Place the samosas on the prepared baking sheet and brush them with oil. 8. Bake the samosas for 20-25 minutes, or until they turn golden brown and crispy.

Serving suggestions:

1. Serve the hot samosas with your favorite dipping sauce, such as salsa or guacamole. 2. You can also serve them as a side dish with your favorite Mexican main course, like enchiladas or tacos. 3. These samosas are perfect for parties and gatherings, as they can be made in advance and reheated in the oven. In conclusion, these Mexican samosas are a delicious and unique twist on the traditional samosas. The crispy pastry shell, filled with a flavorful mixture of spices and vegetables, will surely be a hit among your family and friends. So next time you're craving a savory snack, give this recipe a try and experience the bold and vibrant flavors of Mexican cuisine.
