  • 8-10 corn tortillas
  • 1 can of black beans, drained and rinsed
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 1 cup of corn kernels
  • 2 cups of shredded cheese (Mexican blend or cheddar)
  • 1 cup of salsa
  • 1 can of enchilada sauce

Seasonings:

  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper (optional)
  • Salt and pepper to taste

Directions:

Step 1: Preheat your oven to 375°F (190°C). In a large skillet, sauté the diced onions and bell peppers over medium heat until they are soft, about 5 minutes.
