Ingredients:

For the Base:

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chilies
  • 1 packet taco seasoning
  • 1 cup salsa

For the Topping:

  • 1 cup shredded Mexican blend cheese
  • 1 cup crushed tortilla chips
  • 1/4 cup chopped fresh cilantro
  • Sour cream for serving (optional)
  • Sliced avocado for serving (optional)

Instructions:

To start, preheat your oven to 375°F. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat and add in the chopped onion and minced garlic. Cook until the onion is translucent.

Add in the diced tomatoes, black beans, corn, and diced green chilies. Stir to combine and then add in the taco seasoning. Mix well and let it simmer for a few minutes.

Next, add in the salsa and stir until everything is well coated. Let it cook for another 5 minutes, allowing the flavors to meld together.
