Ingredients
To make this Mexican chocolate peanut butter stout, you will need the following ingredients:
Malt:
- 8 lbs. of 2-row malt
- 1 lb. of chocolate malt
- 1 lb. of roasted barley
- 1 lb. of flaked oats
- 1 lb. of flaked wheat
Hops:
- 1 oz. of Chinook hops (60 minutes)
- 1 oz. of Cascade hops (30 minutes)
- 1 oz. of Fuggle hops (15 minutes)
Other Ingredients:
- 1 cup of cocoa nibs
- 1 cup of peanut butter
- 2 cinnamon sticks
- 2 dried ancho chilies
- 2 dried guajillo chilies
- 1 vanilla bean
- 1 lb. of lactose
Brewing Process
To start, heat up 3 gallons of water in your brew pot to 165°F. Add in the crushed grains and stir. Let the mixture steep for 60 minutes, keeping the temperature between 150-155°F. After 60 minutes, remove the grains and bring the wort to a boil.
Once boiling, add in the Chinook hops and let it boil for 30 minutes. Then, add in the Cascade hops and let it boil for another 15 minutes. Finally, add in the Fuggle hops and let it boil for an additional 15 minutes.
While the wort is boiling, prepare the other ingredients. Toast the cocoa nibs in the oven at 350°F for 10 minutes. In a separate pan, toast the cinnamon sticks, ancho chilies, and guajillo chilies for 5 minutes. Then, add these ingredients, along with the vanilla bean, to the wort during the last 10 minutes of the boil.
After the 60-minute boil is complete, turn off the heat and let the wort cool down to around 80°F. Once cooled, transfer the wort to your fermenter and add in the lactose and peanut butter. Mix well and let it ferment for 2 weeks.
After fermentation is complete, transfer the beer to a secondary fermenter and add in the toasted cocoa nibs. Let it sit for another week before bottling or kegging.
