This Chopped Egg Masala Curry is a unique and delicious dish that is sure to become a favorite in your household. It is made with boiled eggs, cooked in a masala gravy, and topped with chopped onions and tomatoes. Serve it with some rice or chapatis for a wholesome and satisfying meal.

The Perfect Batter

To make the perfect masala dosa, the most important element is the batter. The batter should be smooth, slightly thick, and have a tangy flavor. It is usually made with a combination of rice and lentils, which are soaked, ground, and fermented overnight. This fermentation process is crucial as it gives the batter its tangy flavor and helps in making the dosa light and crispy. Rice and lentils are the main ingredients in this batter, but you can also add a handful of poha (flattened rice) and fenugreek seeds to enhance the texture and flavor.

Seasoning the Dosa

Once the batter is ready, it's time to prepare the masala or filling. The most common filling is a spiced potato mixture, but you can also use other vegetables like onions, carrots, peas, and bell peppers to add more nutrition and flavor. To make the masala, heat some oil in a pan and add mustard seeds, cumin seeds, urad dal, and chana dal . Once they start to splutter, add curry leaves, green chilies, ginger, and onions . Sauté until the onions turn translucent, then add boiled and mashed potatoes along with turmeric, coriander powder, and salt . Cook for a few minutes until the spices are well combined and the masala is heated through.

Assembling and Serving

Now that the batter and masala are ready, it's time to assemble and cook the dosa. Heat a non-stick pan or a traditional dosa tawa on medium-high heat. Pour a ladleful of batter onto the pan and spread it in a circular motion to form a thin crepe. Drizzle some oil around the edges and let it cook for a few minutes until the edges start to crisp up. Add a spoonful of the prepared masala in the center of the dosa and fold it into a half-moon or roll it like a wrap. Serve the dosa hot with coconut chutney, tomato chutney, and sambar for a delicious and authentic South Indian experience. In conclusion, masala dosa is a staple South Indian dish that can be enjoyed for breakfast, lunch, or dinner. It may take some time and practice to perfect the art of making a crispy, flavorful masala dosa, but the end result is definitely worth it. So why not try this recipe and bring a taste of South India to your home today!
