How to Make a Light Christmas Cake

Ingredients:
500g mixed dried fruit
100g glace cherries
100g dates, chopped
100g dried cranberries
150ml brandy
200g wholemeal flour
1 tsp baking powder
1 tsp mixed spice
100g unsalted butter
100g light brown sugar
2 eggs
2 tbsp honey
1 tsp vanilla extract
Instructions:
In a large bowl, mix together the dried fruit, glace cherries, dates, cranberries and brandy. Cover and leave to soak overnight.
Preheat your oven to 160°C (140°C fan)/320°F/gas 3. Grease and line a 20cm round cake tin with baking paper.
In a separate bowl, sift together the wholemeal flour, baking powder and mixed spice.
In a third bowl, cream together the butter and sugar until light and fluffy. Add in the eggs, one at a time, beating well after each addition. Then mix in the honey and vanilla extract.
Gradually fold in the flour mixture into the wet ingredients, followed by the soaked fruit and any remaining liquid.
Pour the cake batter into the prepared tin and smooth the surface with a spatula.
Bake for 2 hours or until a skewer inserted into the center comes out clean. If the cake starts to brown too quickly, loosely cover with foil.
Once baked, leave the cake to cool in the tin for 15 minutes before transferring to a wire rack to cool completely.
