Dough:

  • 7g fast-action yeast
  • 75g caster sugar
  • 1 tsp salt
  • 250ml lukewarm milk
  • 3 eggs, beaten
  • 125g unsalted butter, softened
  • 125g mixed dried fruits (such as raisins, cranberries, and cherries)
  • 75g mixed peel
  • Zest of 1 orange
  • 100g dark chocolate, chopped

Instructions

Step 1: Make the dough

In a large mixing bowl, combine the flour, yeast, sugar, and salt. Make a well in the center and add in the lukewarm milk and beaten eggs. Using your hands, mix the wet ingredients into the dry ingredients until a dough forms. Then, add in the softened butter and continue to knead until the dough becomes smooth and elastic. This should take about 10 minutes.
