  • Assorted wild mushrooms (such as shiitake, enoki, maitake, and oyster)
  • 1 block of firm tofu, cubed
  • 1 bunch of bok choy, chopped
  • 1 carrot, thinly sliced
  • 1 leek, thinly sliced
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions:

  1. Start by preparing the broth. In a pot, add water, dried shiitake mushrooms, kombu seaweed, onion, garlic, ginger, soy sauce, mirin, and sake. Bring to a boil, then lower the heat and let it simmer for 20 minutes.
